How to choose the right kitchen knife for your needs?

What should you think about before buying a knife?

First of all, you need to know the reason for your future purchase. Is it for :

  • Complete a collection,
  • Replace a knife,
  • Make certain cuts easier,
  • Other, ...

From then on, you'll be guided towards certain knives according to a few criteria.

What's the right budget for a knife?

Although price doesn't always make the difference in terms of quality, it's important to know whether or not you're going to need this knife very often. Let's just say that a cooking enthusiast who uses his knife 3 or 4 times a month will certainly not have the same desires as a cooking fanatic. In order to determine the right price for your purchase, you need to know in advance how often it will be used. The more or less noble materials used in a knife will also have a major influence on the price. On the other hand, they ensure optimum, long-lasting quality.

A first-price knife can therefore range from €5 to several hundred euros. Let your purchasing capacity and the quality of the materials be your guide.

Which knife is right for me?

In fact, it's not always easy to know exactly the right shape for your needs. At Maison Damas, we do our utmost to guide you through our product sheets and our store to avoid using overly complex terms. So if we have one piece of advice to give you here, it would be to go to our store and use the filters to find the blade best suited to your needs. Even if some blades have rather "universal" uses, you need to pay attention to your future use in order to get the most out of your purchase.

And what about the cutting edge? How can we be sure of it?

You are quite right to ask yourself this question. It's impossible to test a knife's cutting edge before you buy it on the Internet. So before you are disappointed, there are two main criteria you should look for before ordering:

  • Blade material
  • Sharpening angle

Let's take this step by step. The material of the blade is very important. A ceramic knife will be fine when you buy it, but will quickly degrade and even break. Then, there are several types of steel that can be found on our traditional kitchen knives, steak knives and so on. For our part, we've opted for Damascus steel. This material is renowned for its hardness and reliability. So, if you want a quality knife, go for damascus steel.

The angle of sharpening also affects the quality of the cut. Almost all kitchen knives have 20-degree angles. We recommend 15-degree angles on both sides of the blade. This sharpening angle will enable you to: get a good cutting edge and preserve it over time.

As you can see, when it comes to sharpness, you'll need to look at the knife's blade material and sharpening angle.
