Historically used for Japanese dishes such as sushi and sashimi, it allows for greater precision when cutting food. Now little used in Europe, it can be used for general cutting tasks such as preparing vegetables and fruit, or even raw fish and meat. But its advantages don't stop there: if you want to cut onions, herbs or garlic, you can also do so with this knife.
