These uniquely designed knives are made with the highest quality Damascus steel and feature 67 layers, 15° sharpening on each side of the blade. Each knife is ergonomically molded to create a resin handle. The kiritsuke knife is used for cutting, chopping and slicing. The honesuki knife is used for skinning, boning and finely carving your various condiments.
